Ingredients

  • 1 can (14.5 oz.) Del Monte® Diced Tomatoes with Garlic and Onion
  • 1 can (15.25 oz.) Del Monte® Whole Kernel Corn-Low Sodium, drained
  • 3 skinless, boneless chicken breast halves, diced
  • 1 Tbsp. chili powder
  • 1 can (15 oz.) low-sodium black beans or kidney beans, drained
  • shredded monterey jack cheese
  • diced avocado
  • chopped radishes
  • sliced green onions

Cooking Directions

1. Combine chicken, undrained tomatoes and chili powder in medium saucepan. Cook over medium heat about 5 minutes or until chicken is done and sauce is slightly thickened.
2. Add beans and corn. Simmer 5-7 minutes or until heated through.
3. Garnish with cheese, avocado, radishes and onions as desired.
