1. Drain pineapple reserving 2 tablespoons juice.
2. Toss chicken with soy sauce and ginger. Season with salt and pepper, if desired.
3. Toss lettuce with green onions. Spread on serving dish. Arrange chicken, pineapple and cilantro over lettuce.
4. Blend together oil, reserved pineapple juice, vinegar, honey and mustard. Drizzle dressing over salad. Garnish with chopped peanuts and cilantro leaves if desired.
