Ingredients

  • 1 can (14.5 oz.) College Inn® Fat Free & Lower Sodium Chicken Broth
  • 1 can (15.25 oz.) Del Monte® Whole Kernel Corn-No Salt Added, drained
  • 2 Tbsp. butter or margarine
  • 2 cups chopped onion
  • 1 cup sliced celery
  • 1 can (4 oz.) diced green chiles, drained
  • 3 Tbsp. chopped parsley
  • 1/2 tsp. poultry seasoning
  • 1/4 tsp. oregano
  • 6 cups dry cornbread stuffing crumbs
  • 1/2 cup chopped pecan pieces
  • 12 to 15 lb. turkey, optional

Cooking Directions

1. Preheat oven to 350°F. Melt butter in large saucepan; cook onion and celery until tender.
2. Stir in chicken broth, corn, chilies, parsley, poultry seasoning and oregano; mix well.
3. Add cornbread crumbs and nuts; toss to moisten evenly.
4. Spoon into covered casserole and bake 30 minutes or until heated through, or use to stuff 12 to 15 lb. turkey, if desired.
