Stuffed Focaccia with Spinach, Tomatoes, Olives and Mozzarella

This meatless sandwich melt, stuffed with tomatoes and vegetables, is delicious for lunch or dinner with soup.

Ingredients

¼ cup light mayonnaise

½ tsp. dried Italian seasoning

1 focaccia [or ciabatta loaf], (10 to 12-inch), split horizontally

1 can (14.5oz.) Del Monte® Original Recipe Stewed Tomatoes, drained and finely chopped

¼ cup pitted kalamata olives, chopped

¼ cup chopped roasted red bell pepper

2 cups fresh baby spinach

½ cup shredded mozzarella cheese

pepperoncini, optional

Directions
  1. Preheat oven to 350°F. Combine mayonnaise and Italian seasoning in a small bowl. Spread mayonnaise mixture over the cut sides of focaccia bread.
  2. Combine tomatoes, olives and bell peppers in a medium bowl. Spoon onto bottom half of focaccia. Top with spinach and cheese. Place top half of bread over cheese, spread side down. Wrap tightly with foil.
  3. Bake 20 minutes or until sandwich is heated through and cheese is melted. Cut into 6 pieces. Serve with pepperoncini, if desired.
