Marinated Green Bean and Potato Salad

Ready-to-use canned green beans and potatoes make this salad extra easy. For a lighter calorie version, use fat-free salad dressing, skip the pesto and add chopped fresh basil.

Ready-to-use canned green beans and potatoes make this salad extra easy. For a lighter calorie version, use fat-free salad dressing, skip the pesto and add chopped fresh basil.

Ingredients

1 can (14.5oz.) Del Monte® No Salt Added Cut Green Beans, drained

1 can (14.5oz.) Del Monte® Sliced New Potatoes, drained

¾ cup thinly sliced red bell pepper

¼ cup bottled Italian salad dressing


Optional Toppings:

  • Salt and black pepper
  • 2 Tbsps. prepared basil pesto

 

Directions
  1. Combine beans, potatoes, bell pepper, and salad dressing in a medium bowl. Gently stir until well coated. Season to taste with salt and pepper, if desired. Cover and refrigerate 1 hour.
  2. Gently stir in pesto, if desired.


NOTE: To lighten fat, use fat-free or reduced fat salad dressing and substitute 2 Tbsp. chopped fresh basil for pesto.
