Ingredients

2 cups ditalini pasta 

1 can of Del Monte Mexican Style Street Corn, drained

2/3 cup red onions, finely chopped 

3 tbsp cilantro, finely chopped 

3 tbsp cotija cheese 

1/3 cup mayonnaise 

1/3 cup sour cream 

3 tbsp lime juice 

1/2 tsp salt 

1/2 tsp black pepper

1/2 tsp onion powder 

1/2 tsp garlic powder 

1/2 tsp tajin 

1/4 tsp chili powder 

1/4 tsp cayenne pepper

Directions

  1. Cook the ditalini pasta until al dente. Drain and let cool.

  2. Drain the can of Del Monte Mexican Style Street Corn with a strainer. Then, add it to the pasta along with red onion, cilantro, and cotija cheese.

  3. To make the dressing, combine: mayonnaise, sour cream, lime juice, salt, pepper, onion powder, garlic powder, tajin, chili powder, and cayenne pepper. Mix well and then pour it into the pasta salad and combine.

  4. Garnish with more cilantro, cotija cheese, and fresh lime wedges.
