Ingredients

1 can Del Monte Hot Honey Carrots, drained

3 TBSP extra virgin olive oil, divided

1 clove garlic, minced

1 scallion/green onion whites, minced 

½ can Del Monte Sweet Peas, drained

2 cups cold cooked rice (day-old works best!)

2 TBSP soy sauce

1 egg

2 tsp Sesame Seed Oil

1 green onion, sliced

Salt/Pepper (to taste)

Directions

  1. In a large skillet or wok, heat 2 tbsp oil over medium-high heat.

  2. Add garlic and green onion whites, cook until fragrant (about 30 seconds).

  3. Stir in peas, rice, soy sauce, salt/pepper, and Hot Honey Carrots. Cook until heated through.

  4. Lower heat to medium, push rice to one side, then add 1 tbsp oil to the empty side of the pan. Scramble egg, then mix into the rice.

  5. Finish with a drizzle of sesame oil, green onion tops, and enjoy!
